MARRY ME SHRIMP PASTA
📋 Ingredients:
1 pound large shrimp, peeled and deveined
1 pound fettuccine pasta
1/4 cup olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese, plus more for serving
2 tablespoons butter
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1 lemon, zested and juiced
Salt and freshly ground black pepper to taste
1/4 cup roasted red bell peppers, diced
1/4 cup Kalamata olives, pitted and halved
1/4 cup chopped green onions
👩🍳 Directions:
1️⃣ Cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
2️⃣ Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook for about 30 seconds until fragrant.
3️⃣ Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp and set aside.
4️⃣ Add the sun-dried tomatoes, roasted red bell peppers and Kalamata olives to the skillet and cook for 2-3 minutes, stirring occasionally.
5️⃣ Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
6️⃣ Stir in the heavy cream, Parmesan cheese, and butter. Reduce heat to low and simmer for 5 minutes until the sauce has thickened slightly.
7️⃣ Season the sauce with salt, pepper, lemon zest, and lemon juice to taste.
8️⃣ Add the cooked pasta to the skillet and toss to coat. If needed, add reserved pasta water for desired consistency.
9️⃣ Return the shrimp to the skillet and toss gently to combine.
🔟 Stir in the fresh basil, parsley and green onions. Serve immediately with extra Parmesan cheese.
