Ingredients:
4 cod fillets (about 6 oz each)
1 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons fresh parsley, finely chopped
1 egg
2 tablespoons olive oil
Lemon Dressing:
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
2 tablespoons olive oil
1 teaspoon honey
1 teaspoon lemon zest
Pinch of salt and pepper
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
In a shallow bowl, mix Parmesan, panko, garlic powder, paprika, salt, pepper, and parsley.
In another bowl, beat the egg.
Dip each cod fillet into the egg, then coat thoroughly with the Parmesan mixture.
Place the crusted cod on the prepared baking sheet. Drizzle lightly with olive oil.
Bake for 12–15 minutes or until golden and the fish flakes easily with a fork.
While the fish bakes, whisk together all lemon dressing ingredients in a small bowl.
Serve cod fillets hot with lemon dressing drizzled over the top or on the side.
